- Scott brings over twenty years cooking experience, from various styled restaurants and hotels, having a strong foundation in French culinary technique. He previously owned his own restaurant for over nine years with a focus on fine dining and tasting menus using local produce. Scott’s repertoire includes italian, tapas, Michelin star and now Irish cuisine.
- Scott has started the season by redesigning our Yew Tree menu with a strong emphasis on spring flavours. Scott’s objective within in his new role is “to deliver a culinary experience beyond guest expectations”.
